Ok, I admit it, I've never cooked w/ Tofu. I decided it's about time. So, I bought some Firm tofu when I went to the grocery store. But, now, I need ideas of how to incorporate it in a meal or two. DH won't eat it, so fixing it in a dinner is out. So, I'm focusing on something for lunch or breakfast (lunch, preferably, though). Any suggestions for menu ideas?

My favorite lunch or breakfast involves firm Tofu! Pan fry thin slices of it with some seasoning (I like lemon pepper) and some onions and peppers. Add green stuff (I only do that at lunch, I guess) like lettuce, cilantro, or spinach and make a sandwich with toast or a bagel. You can buy mixes to add to it (Tofu Scrambles, for instance) and make breakfast with.

One of my favirite things to do is make baked tofu, and then you can use it for a million things.
You take marinated tofu, anything but really soft, and cut it in pieces about a half inch thick and two inches square and put in on a cookie sheet and bake it at about 350 until it looks kind of shriveled a little. You don't want to dry it out. Then you put it in a container and keep it in the fridge and use for whatever. Some ideas....
hummus and tofu sandwiches (these are good with any veggies) cut up on salads in wraps or my favorite way, just right out of the fridge whan you are looking for a snack!
I usually marinate it in soy sauce, ginger, brown sugar and a little sesame oil. It is really good sprinkled with sesame seeds before you bake it . And if you just want to cheat, buy Soy Vay Chinese Chicken salad dressing. Yum!!!!
You can also use the soft tofu mixed with avacado, garlic, tomato for a gringo Guac dip. It makes it nice and creamy. Even my Midwestern dad will eat this one.

i dont have it on me at present but we have a recipe for a salad (much like egg salad where you substiture tofu for egg) it is fantastic on cripsy bread or toast. i often make a batch and keep it in the fridge and use it as a sub to butter ect.
a little curry in it give a dif flavour, ill dig the recipe out for you
also we make indian saag and put in tofu which is nice and of course miso soup.
baked and grilled is great also.

Oh, and building on something Addrienne said, soft tofu scramble are so good for breakfast! You can also make breakfast burritos with it. Saute whatever veggies sound good with some garlic, the just use the soft tofu insted of egg. I add a little curry powder and some tarragon. If you are making burritoes you can smother them with some vegi green chile sauce. Yum!! I am making myself so hungry!

hi i guess tofu scramble is another name for my suggestion. it is great and you can match it with so many flavours. i always use soft tofu for this but when i stir fry or bake or BBQ ect we use hard. it really is great stuff, im glad it is getting more and more popular. actually all vegan alternatives are becoming accessable... our local shaws even has a vegan section now ... (dont know if i really would want to bye fromtheir however

Wow, Im glad I found this thread! I am VERY happy to report that Greta ate a whole baby-sized tofu serving with dinner tonight! Im still learning about how to make tofu. What I did tonight was cut a chunk about 1/2" thick, about a 3"x3" square. I sauteed it with a little butter (out of olive oil! darn!) till it was a little crispy on the outside, and then I cut it into baby bites, and put it in a little broth with some carrots, and she loved it! Woo hoo! Shannon, the baked tofu sounds awesome. Does it get chewy? Id love it that way.

It gets kid of chewy, but Del can eat it with her toothless little mouth. It is soooo good. I have to go buy tofu and make it now!!!!!!
