I made a yummy curry dinner the other night. It is so easy!
Coconut milk veg broth curry paste (red is my fav, but it is also good with green) brown sugar touch of lemon grass This was all to taste
Marinated tofu (I just used soy sauce, brown sugar, sesame oil and a splash of rice vinegar) sliced red pepper mushrooms baby corns cellophane noodles
I brown the tofu and then throw everything else in for just a minute. Then put the noodles in a bowl, put the veggies on top and the curry sauce on top if that. Garnish it with cilantro.
