I love granola (I eat it as cereal in the morning and eat it mixed in low-fat vanilla yogurt as a treat). I'd like to try my hand at making my own as I've heard it tastes better. All the recipes I've found look simple, but contain a lot of fat and calories. Any suggestions?
Try looking for recipes for Meuslix. It's like granola, but with smaller chunks. I used to (have to) make this and don't remember it being terribly high fat/sugar. I think the calories in granola come from a lot of butter and sugar to hold the chunks together. Could be wrong, though.
i tried granola a few months back but muesli is what we eat here. generally a honey mixture on the oats is good and then you toast it in the oven. I'll post more about this later.
I found this recipe & made it...quite good. Ok, it's not low-cal /low-fat like I wanted, but at least the fat is a bit healthier than butter.
2 cups old fashioned rolled oats, uncooked 1/4 cup brown sugar 1/2 tsp cinnamon 1/4 tsp salt 1/4 cup honey 1/4 cup light-flavored olive oil 1/2 tsp vanilla 1/3 cup wheat germ 1/2 cup raisins (optional)
Preheat oven to 325 degrees. Grease a baking sheet.
In a large bowl, combine oats, brown sugar, cinnamon, and salt. In a glass measure, warm honey in a microwave until it is a liquid (about 20sec). Add oil & vanulla to honey and mix well.
Drizzle the honey mixture over the dry ingredients and combine together; all ingredients should look slightly damp. Spread the mixture onto a greased baking sheet.
Bake for 10-12min. Stir halfway. Remove from the oven and mix in wheat germ and raisins immediately. Let cool completely in pan (about 20min). Granola will look golden and not be crunchy at first; it will become crunchy as it cools.
Store in an airtight container. Keeps for about a week. Makes approximately 3 cups.
