I haven't had a working oven for 16 months, i am so looking forward to it.  we've only had hot plates so its been a very limited eating.

So please inundate me with your best baked/grilled veg and dessert recipes.

I'm happy to hear that. Grin

What perfect timing!  I'm working on a bar cookie recipe that should be done tomorrow or the next day, I'll post it.

Sweet potatoe fries:
  • cut a sweet potatoe into shoestring pieces, skin on, please, make sure they're organic  Wink
  • put a few chunks of ginger and cloves of garlic on individual toothpicks (so you don't loose them and eat them accidentally  Tongue )
  • shake the potatoes, ginger and garlic around in a big bowl with some olive oil and saltalong with a few sprigs of fresh rosemary or sage if you have it in the house.  The smell will knock your socks off!
  • spread them out single layer ( a little overlap is OK) on a baking sheet
  • cook at about 375 (F) until they're done.

all f & v are organic here. 4 weeks seems  like so long away, i'll be close to 30 weeks eek

OK, this isn't the recipe I was working on before (I ran out of pumpkin before I got it right) but it's yummy.

French Toast Cookies

beat together 2 Tbs vanilla soymilk with 1/2 Tbs Egg Replacer

add 1/4 c. maple syrup,
      1/4 tsp almond extract
      2 Tbs melted margarine (unsalted)
     
1/4 tsp salt
 (forgot this in original post)
                                        to the Egg Replacer mixture

add 1/8 c. wheat germ
      1/4 c. whole wheat pastry flour
      1/4 c. yellow corn meal 
                                        to the wet ingredients

Pour batter into a greased 4x8 inch pan (loaf size) and bake at 350 F until a dry knife comes out clean.  Flip the cooked slab onto a wire rack to cool.  Slice into cookie sized bits and enjoy with soymilk.

update on the baking.  so good to have an oven fater 2 years. 

We have made:
scones (vegan and non vegan)
banana oatmeal cookies
Anzac biscuits - these are a fantastic recipe, i'll post the recipe later
a few roast veg meals with breadcrumbed tofu
banana bread
nachos
pie crusts for the lemon pie, plus more.  its been good. pink flower
